roasted pepper + goat cheese

Last night, I used this recipe to make roasted pepper and goat cheese sandwiches. This was my first time roasting peppers in the oven and I have to admit, it was pretty easy. Rotating them twice during baking gave them the perfect smokey-charred flavor that I was hoping for (even after peeling off the skins!). I'm so happy I made enough for another sandwich or two.
